Delicious tender beef slow-cooked with chiles and spices, then assembled into crispy tacos topped with cheese and fresh garnishes.

2lbsbeef (chuck roast or short rib)
1oniononion, chopped
4clovesgarlic, minced
2cupsbeef broth
2-3driedguajillo chiles
2-3driedancho chiles
2tspcumin
2tsporegano

as neededTortillas (corn or flour)
1cupshredded cheese (Oaxaca or mozzarella)
for garnishChopped cilantro and onion

Instructions
Combine beef, chopped onion, minced garlic, beef broth, dried chiles, cumin, oregano, salt, and pepper in a large pot. Simmer for 120-180 minutes until tender.
Shred the cooked beef and strain the cooking liquid to use as a dipping sauce.
Heat a skillet over medium heat. Place a tortilla, add shredded beef and cheese, fold, and cook until crispy and cheese melts, about 3 minutes per side.
Serve tacos garnished with cilantro, onion, and lime wedges, with the strained sauce on the side.
Notes
For extra flavor, toast the dried chiles before blending.
