Instructions
Trim excess fat from beef, cut into 1-inch cubes, and brown in a skillet with olive oil if desired. Set aside.
Halve or quarter potatoes. Mix softened butter with minced garlic to make garlic butter.
Layer beef and potatoes in the crockpot. Pour broth and Worcestershire sauce over, then season with salt, pepper, and thyme. Dot with garlic butter.
Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender and potatoes are soft. Stir 30 minutes before end to distribute flavors.
Garnish with chopped parsley and serve hot.
Notes
For extra flavor, brown the beef before adding to the crockpot.
