Ingredients

Meat

  • 2 lbs beef chuck roast, cut into bite-sized cubes (Trim excess fat)

Vegetables

  • 1.5 lbs baby potatoes, halved or quartered (Ensure even cooking)

Dairy & Oils

  • 6 tablespoons unsalted butter, softened (Make garlic butter)
  • 5 cloves fresh garlic, minced
  • 1 cup beef broth (Low-sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

Seasonings

  • to taste Salt and freshly ground black pepper
  • 1 tablespoon olive oil (Optional, for browning beef)

Garnish

  • for garnish Chopped fresh parsley (Optional)

Instructions 

  • Trim excess fat from beef, cut into 1-inch cubes, and brown in a skillet with olive oil if desired. Set aside.
  • Halve or quarter potatoes. Mix softened butter with minced garlic to make garlic butter.
  • Layer beef and potatoes in the crockpot. Pour broth and Worcestershire sauce over, then season with salt, pepper, and thyme. Dot with garlic butter.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender and potatoes are soft. Stir 30 minutes before end to distribute flavors.
  • Garnish with chopped parsley and serve hot.

Notes

For extra flavor, brown the beef before adding to the crockpot.
