Enjoy these flavorful twice-baked sweet potatoes, filled with a savory mixture of shallots, thyme, and cheese, then baked to perfection.

Ingredients

Sweet Potatoes

  • 3 medium sweet potatoes (about 8 ounces each)
  • 1 tablespoon olive oil
  • 2 shallots shallots, minced (about 1/3 cup)
  • 1 teaspoon fresh, chopped thyme
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 2 ounces Fontina cheese, grated (about ¾ cup)
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper

Optional garnish

  • 1 sprig fresh thyme

Instructions 

  • Preheat oven to 400°F (200°C). Bake sweet potatoes until tender, about 50 minutes, then cool.
  • Sauté shallots and thyme in olive oil until softened, then remove from heat.
  • Cut cooled sweet potatoes in half, scoop out flesh leaving a ½-inch border.
  • Mix potato flesh with shallots, melted butter, egg, cheese, salt, and pepper. Fill shells with mixture.
  • Bake filled potatoes at 400°F for 20-25 minutes until puffed and browned. Garnish with thyme sprigs and serve hot.

Notes

For extra flavor, sprinkle with additional herbs or cheese before the second bake.
