Ingredients

shallots

unsalted butter, melted

Fontina cheese, grated
(about ¾ cup)

Instructions
Preheat oven to 400°F (200°C). Bake sweet potatoes until tender, about 50 minutes, then cool.
Sauté shallots and thyme in olive oil until softened, then remove from heat.
Cut cooled sweet potatoes in half, scoop out flesh leaving a ½-inch border.
Mix potato flesh with shallots, melted butter, egg, cheese, salt, and pepper. Fill shells with mixture.
Bake filled potatoes at 400°F for 20-25 minutes until puffed and browned. Garnish with thyme sprigs and serve hot.
Notes
For extra flavor, sprinkle with additional herbs or cheese before the second bake.
