Sheet Pan Maple Glazed Salmon with Roasted Vegetables

A delicious and easy one-pan meal featuring tender salmon glazed with maple syrup, roasted potatoes, green beans, and cherry tomatoes.

Ingredients

Salmon

  • 4 fillets salmon fillets (about 3-4 oz each)

Olive Oil

  • 3 tbsp olive oil (divided)

Spices and Seasonings

  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp black pepper (divided)
  • 1 ¼ tsp salt (divided)

Maple Syrup

  • ¼ cup maple syrup

Dijon Mustard

  • 1 tbsp Dijon mustard

Vegetables

  • 1 lb petite gold potatoes (halved)
  • ½ lb green beans (trimmed Juice from)
  • ½ fresh lemon lemon (juice only)
  • 10 oz cherry tomatoes (halved)

Optional Spices

  • ½ tsp red pepper flakes (optional)

Fresh Parsley

  • for garnish fresh parsley (optional garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • Toss potatoes with 2 tbsp oil, ½ tsp salt, ¼ tsp pepper, paprika, garlic, and onion powder. Roast 20 minutes.
  • Season salmon with ¼ tsp salt, ¼ tsp pepper, and remaining spices. Mix glaze with maple syrup, mustard, lemon juice, and optional red pepper flakes.
  • Push potatoes to one side, add green beans and tomatoes, drizzle with remaining oil, season, and toss. Place salmon on the pan and brush with glaze.
  • Bake 12–15 minutes until salmon flakes. Brush with remaining glaze, broil 1–2 minutes, garnish with parsley, and serve.

Notes

Ensure not to overbroil to prevent burning the glaze.
