A flavorful and easy-to-make seafood dish featuring shrimp, sausage, and vegetables all roasted on a sheet pan.

Ingredients

Protein

  • 1 pound raw jumbo shrimp (peeled and deveined)
  • 12 ounces smoked sausage (sliced into coins)

Vegetables

  • 1 pound small yellow potatoes (or red potatoes)
  • 2 to 3 cobs corn cobs (cut into 2-inch sections)
  • 8 ounces white mushrooms
  • 1 medium sweet onion (cut into petals)

Seasonings & Herbs

  • 16 tablespoons salted butter
  • tablespoons Old Bay seasoning
  • 2 teaspoons minced garlic
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment.
  • Arrange shrimp, sausage, potatoes, corn, mushrooms, and onion on the sheet in a single layer.
  • Melt butter, then stir in Old Bay, garlic, and parsley. Brush generously over all ingredients.
  • Bake for 20-25 minutes until potatoes are tender. Serve hot.

Notes

For extra flavor, add a squeeze of lemon before serving.
