A hearty and flavorful one-pot meal combining ground beef, pasta, and chili spices for a quick, satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)

Spices and Broth

  • 2 tablespoons chili powder (see note)
  • 1 teaspoon smoked paprika
  • 1 can (4 ounces) diced green chilies (mild or hot)
  • 2 cups beef broth
  • 1 can (15 ounces) tomato sauce
  • 1/2 cup heavy cream or evaporated milk
  • 1 cup uncooked elbow macaroni
  • 2 cups Mexican blend cheese or cheddar (shredded)

Seasoning

  • to taste Salt & pepper

Instructions 

  • Add beef and onions to a pot over medium-high heat. Cook 7-10 minutes, breaking meat apart. Drain excess fat if needed.
  • Stir in garlic, chili powder, smoked paprika, and green chilies.
  • Add broth, tomato sauce, and cream; bring to a boil. Add pasta, reduce heat, and simmer 13 minutes until pasta is cooked and liquid reduces. Stir occasionally.
  • Remove from heat, stir in cheese, and season with salt and pepper. Cover and let sit for a few minutes to melt cheese.

Notes

You can add extra cheese on top for a melty finish or adjust seasoning to taste.
