A tender and flavorful beef brisket cooked slowly with onions and herbs, served with a rich onion gravy.

Ingredients

Meat

  • 0.8 - 1 kg beef brisket
  • 3 - 4 small/medium brown or red onions (sliced)
  • 6 cloves garlic (sliced)
  • 2 sprigs fresh rosemary (or 1 teaspoon dried rosemary)
  • 1 cube beef stock cube
  • to taste Salt flakes and freshly ground pepper
  • 2 teaspoons cornflour
  • 2 teaspoons cold water
  • Meat juices and the cooked sliced onions/garlic Meat juices and the cooked sliced onions/garlic (for gravy)

Instructions 

  • Allow the brisket to come to room temperature for 30 mins.
  • Place sliced onions and rosemary in the slow cooker, add brisket, season, and crumble in the stock cube.
  • Cook on high for 4-5 hours or low for 7-8 hours until tender.
  • Rest the cooked brisket for 10 mins, then carve. Meanwhile, prepare gravy by combining meat juices, onions, garlic, and thickening with cornflour mixed with cold water. Bring to boil and simmer until thickened.
  • Serve sliced brisket with onion gravy and vegetables.

Notes

For best results, use a good quality beef brisket and fresh herbs.
