A hearty and creamy beef stroganoff cooked slowly to tender perfection, served over noodles for a comforting meal.

Ingredients

Seasoning

  • 1 tablespoon all purpose flour (or gluten-free flour)
  • 2.5 teaspoons kosher salt (divided)
  • to taste black pepper

Main ingredients

  • 2 pounds beef chuck roast (well trimmed and cut into chunks)
  • 1 teaspoon olive oil
  • 1 medium onion (chopped)
  • 1 pound mushrooms (sliced)
  • 1 teaspoon sweet paprika
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce (check labels for gluten-free)
  • 0.75 cup sour cream
  • 1 pound egg noodles (*)

Instructions 

  • Season beef with 1.5 teaspoons salt, black pepper, and flour.
  • Saute onions in olive oil until softened, then transfer to slow cooker.
  • Brown beef in skillet, then add to slow cooker with paprika, broth, remaining salt, and Worcestershire; top with mushrooms and cook on HIGH for 5 hours.
  • Stir in sour cream 30 minutes before serving.
  • Cook egg noodles according to package; serve over or mixed into stroganoff.

Notes

For a gluten-free version, ensure all ingredients, especially Worcestershire sauce and flour, are gluten-free.
