This Slow Cooker Beef Stroganoff is a hearty and comforting dish, perfect for family dinners.

Ingredients

Meat

  • 2 pounds beef chuck roast, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 1 cup beef broth
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley, for garnish
  • cooked egg noodles, for serving

Instructions 

  • Pat the beef dry and season with salt and pepper.
  • Brown the beef in a skillet, then transfer to the slow cooker.
  • Cook onion, mushrooms, and garlic in the skillet until softened, then add to the slow cooker.
  • Stir in cream of mushroom soup and beef broth, then cover and cook.
  • Stir in sour cream just before serving.
  • Garnish with parsley and serve over egg noodles.

Notes

Serve with a side salad for a complete meal.
