A hearty and flavorful slow cooker dish featuring tender beef bites, roasted potatoes, and aromatic garlic butter sauce, perfect for a comforting meal.

Ingredients

Meat and Potatoes

  • 2 lbs beef stew meat (cut into bite-sized cubes)
  • 1 lb baby potatoes (halved or quartered if large)

Dairy and Oils

  • 4 tbsp unsalted butter
  • 2 tbsp olive oil

Garlic and Broth

  • 6 cloves garlic (minced)
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce

Herbs and Seasonings

  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Salt and Pepper

Instructions 

  • Sear beef cubes in hot olive oil until browned, then transfer to slow cooker.
  • Melt butter in skillet, sauté garlic for 1 minute, then add beef broth, Worcestershire, thyme, and rosemary. Pour over beef in slow cooker.
  • Add potatoes to slow cooker, top with remaining butter, and cook on low for 6-7 hours.
  • Adjust seasoning with salt and pepper, garnish with parsley, and serve warm.

Notes

For extra flavor, add fresh herbs before serving.
