Instructions
Heat olive oil in a skillet, season beef, and sear in batches for 2-3 minutes per side. Transfer to slow cooker.
In the same skillet, melt butter, add garlic, and sauté for 1 minute.
Pour in beef broth and Worcestershire sauce, scrape browned bits, add thyme and rosemary, then pour over beef in slow cooker.
Add potatoes to slow cooker, top with remaining butter, and cook on low for 6-7 hours.
Taste and adjust seasoning, then garnish with chopped parsley before serving.
