Ingredients

Meat

  • 2 lbs pounds beef stew meat (cut into bite-sized cubes)

Vegetables

  • 1 lb pounds baby potatoes (halved or quartered if large)

Dairy & Oils

  • 4 tbsp tablespoons unsalted butter
  • 2 tbsp tablespoons olive oil

Garlic & Sauces

  • 6 cloves cloves garlic (minced)
  • 1/2 cup cups beef broth
  • 1 tbsp tablespoon Worcestershire sauce

Herbs & Seasonings

  • 1 tsp teaspoon dried thyme
  • 1 tsp teaspoon dried rosemary
  • Salt and pepper Salt and pepper (to taste)

Garnish

  • Fresh parsley chopped parsley (for garnish)

Instructions 

  • Heat olive oil in a skillet, season beef, and sear in batches for 2-3 minutes per side. Transfer to slow cooker.
  • In the same skillet, melt butter, add garlic, and sauté for 1 minute.
  • Pour in beef broth and Worcestershire sauce, scrape browned bits, add thyme and rosemary, then pour over beef in slow cooker.
  • Add potatoes to slow cooker, top with remaining butter, and cook on low for 6-7 hours.
  • Taste and adjust seasoning, then garnish with chopped parsley before serving.
