Ingredients

Dough

  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1/2 cup unsulphered light or medium molasses
  • 1 tablespoon vanilla extract
  • 3 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • pinch optional salt (to taste)
  • 1 1/4 cups all-purpose flour
  • 1 1/2 cups semi-sweet chocolate chips (divided)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with foil and spray.
  • Melt butter in microwave, then whisk in egg, sugar, molasses, vanilla, spices, and salt until smooth.
  • Stir in flour until just combined, then fold in 1 1/4 cups chocolate chips.
  • Spread batter in prepared pan, sprinkle remaining chocolate chips on top, pressing lightly.
  • Bake for 32-34 minutes until edges are set but center is fudgy. Cool before slicing.

Notes

Let the bars rest overnight for best flavor and texture. Store airtight at room temperature for up to 1 week or freeze for longer storage.
