Instructions
Peel and dice potatoes into ¾-inch cubes, then boil in salted water until fork-tender, about 8-10 minutes.
Drain potatoes, transfer to a bowl, add vinegar, and marinate for 20 minutes.
Whisk mayonnaise, relish, mustard, salt, pepper, and garlic powder to make the dressing.
Add dressing, celery, onions, and chopped eggs to the potatoes. Mix well and season to taste.
Refrigerate for 1 hour, then garnish with paprika and sliced green onions before serving.
Notes
For best flavor, chill the salad for at least an hour before serving.
