A creamy, cheesy spinach and artichoke dip perfect for sharing at parties or as a delicious appetizer.
Ingredients
olive oil and aromatics

olive oil (extra virgin)

shallots (finely chopped)

fresh garlic (minced)
artichokes

cup
marinated artichokes (rinsed, drained, and finely chopped)
spinach
4
cups
chopped fresh spinach (chop before measuring)

whole milk

cream cheese

cup
sour cream (full fat)
1/4
cup
good mayonnaise

grated romano cheese
1/4
tsp
freshly cracked black pepper

your favorite hot sauce (optional)
to taste

(add as needed)
Instructions
Warm a saucepan, add olive oil, then cook shallots for 1-2 minutes.
Add garlic and cook for 1-2 minutes until fragrant.
Stir in chopped artichokes and cook for 3 minutes, then add spinach and cook until wilted, about 3-4 minutes.
Add milk, cream cheese, sour cream, and mayonnaise, stirring well after each addition.
Mix in romano cheese, pepper, hot sauce (if using), and salt to taste, then turn off heat.
Transfer dip to a bread bowl, broil for 5 minutes until bubbly and browned, then serve hot with bread or chips.
Notes
For best flavor, serve immediately while hot and bubbly.
