spinach + artichoke dip

A creamy, cheesy spinach and artichoke dip perfect for sharing at parties or as a delicious appetizer.

Ingredients

olive oil and aromatics

  • 1 Tbsp olive oil (extra virgin)
  • 2 Tbsp shallots (finely chopped)
  • 1 Tbsp fresh garlic (minced)

artichokes

  • 1 cup marinated artichokes (rinsed, drained, and finely chopped)

spinach

  • 4 cups chopped fresh spinach (chop before measuring)
  • 3 Tbsp whole milk
  • 4 oz cream cheese
  • 1/4 cup sour cream (full fat)
  • 1/4 cup good mayonnaise
  • 4 Tbsp grated romano cheese
  • 1/4 tsp freshly cracked black pepper
  • 1/2 tsp your favorite hot sauce (optional)
  • to taste optional salt (add as needed)

Instructions 

  • Warm a saucepan, add olive oil, then cook shallots for 1-2 minutes.
  • Add garlic and cook for 1-2 minutes until fragrant.
  • Stir in chopped artichokes and cook for 3 minutes, then add spinach and cook until wilted, about 3-4 minutes.
  • Add milk, cream cheese, sour cream, and mayonnaise, stirring well after each addition.
  • Mix in romano cheese, pepper, hot sauce (if using), and salt to taste, then turn off heat.
  • Transfer dip to a bread bowl, broil for 5 minutes until bubbly and browned, then serve hot with bread or chips.

Notes

For best flavor, serve immediately while hot and bubbly.
