These savory spinach balls are perfect as an appetizer or side dish, combining fresh greens with cheesy, flavorful ingredients.

Ingredients

Spinach

  • 2 packages frozen spinach, thawed & well-drained
  • 2 small onions, very finely chopped (processed in food processor)
  • 2 1/4 cups stuffing with herbs (Pepperidge Farm)
  • 6 eggs beaten eggs
  • 1/2 cup butter, melted
  • 1/2 cup Parmesan cheese
  • 2 tsp garlic salt
  • 1 tsp black pepper

Instructions 

  • Drain spinach thoroughly and squeeze out excess water.
  • Mix all ingredients until well combined, then form into 1-inch balls.
  • Place balls on a sprayed baking sheet and bake at 350°F (177°C) for 20 minutes.
  • Serve hot or at room temperature. Frozen balls can be reheated in the oven at 350°F for 8-10 minutes.

Notes

For best results, freeze baked or unbaked balls for later use.
