Delicious and cheesy steak quesadillas perfect for a quick meal. Loaded with flavorful steak, peppers, and melted cheese, they are easy to make and satisfying.
Ingredients
Meat
8ozflank or sirloin steak, thinly sliced
Vegetables
1bell pepperbell pepper, sliced (any color)
1mediumtomato, diced
Dairy
1cupshredded cheese (cheddar, Monterey Jack, or a Mexican blend)
Bread
2large flour tortillasflour tortillas
Oil
1tspolive oil
pepper and salt to tastepepper and salt(to taste)
Instructions
Season steak with salt and pepper. Cook in a skillet with 1 tsp olive oil for 3–5 minutes until browned. Remove and set aside.
Sauté sliced bell pepper for 3–4 minutes, then add diced tomato and cook for 1 minute. Remove from skillet.
Assemble quesadillas: layer cheese, steak, peppers, tomatoes, and more cheese on half of each tortilla. Fold over.
Cook each quesadilla in a skillet with butter or oil for 2–3 minutes per side until golden and cheese melts.
Let cool slightly, then cut into wedges. Serve with sour cream, salsa, or guacamole if desired.
Notes
Use a hot skillet to get a crispy exterior. Feel free to customize with your favorite toppings.
