Delicious and cheesy steak quesadillas perfect for a quick meal. Loaded with flavorful steak, peppers, and melted cheese, they are easy to make and satisfying.

Ingredients

Meat

  • 8 oz flank or sirloin steak, thinly sliced

Vegetables

  • 1 bell pepper bell pepper, sliced (any color)
  • 1 medium tomato, diced

Dairy

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

Bread

  • 2 large flour tortillas flour tortillas

Oil

  • 1 tsp olive oil
  • pepper and salt to taste pepper and salt (to taste)

Instructions 

  • Season steak with salt and pepper. Cook in a skillet with 1 tsp olive oil for 3–5 minutes until browned. Remove and set aside.
  • Sauté sliced bell pepper for 3–4 minutes, then add diced tomato and cook for 1 minute. Remove from skillet.
  • Assemble quesadillas: layer cheese, steak, peppers, tomatoes, and more cheese on half of each tortilla. Fold over.
  • Cook each quesadilla in a skillet with butter or oil for 2–3 minutes per side until golden and cheese melts.
  • Let cool slightly, then cut into wedges. Serve with sour cream, salsa, or guacamole if desired.

Notes

Use a hot skillet to get a crispy exterior. Feel free to customize with your favorite toppings.
