1poundBeef sirloin or flank steak(thinly sliced)
¼cupSoy sauce
2tablespoonsBrown sugar
2clovesGarlic(minced)
1teaspoonGinger(grated)
1tablespoonSesame oil
3tablespoonsHoisin sauce
1teaspoonSriracha or chili paste(optional, for heat)
2tablespoonsVegetable oil
2unitsCarrots(julienned)
1unitBell pepper(thinly sliced)

8ouncesRice noodles
1tablespoonCornstarch(optional, for thickening sauce)

Instructions
Marinate the beef with soy sauce, brown sugar, garlic, ginger, sesame oil, and hoisin sauce for 20-30 minutes.
Cook the rice noodles according to package instructions; drain and set aside.
Heat oil in a skillet, sear beef in batches for 2-3 minutes per side, then set aside.
Sauté carrots and bell pepper until slightly tender, then add reserved marinade and beef. Thicken sauce with cornstarch mixed with water, simmer until sticky.
Combine noodles with sauce, toss well, then garnish with sesame seeds and green onions. Serve hot.
