A delicious and hearty dish featuring bell peppers stuffed with seasoned ground beef and rice, baked to perfection.

Ingredients

Meat

  • 1 pound ground beef (85/15)
  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 cloves garlic (minced)
  • 1.5 cups instant white rice (or half cooked plain white rice)
  • 1 cup water
  • 2 cups tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon coarse ground black pepper
  • 1 teaspoon Italian seasoning
  • 2 cups beef broth
  • 6 large bell peppers (cut in half through the stem and cleaned)

Parmesan cheese (optional)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook ground beef in a skillet until browned, then drain excess fat.
  • Cook onions and garlic in olive oil for 5-7 minutes, then combine with beef, rice, water, tomato sauce, Worcestershire, salt, pepper, and Italian seasoning.
  • Pour beef broth into a baking dish, fill peppers with mixture, cover with foil, and bake for 60 minutes.
  • Garnish with grated Parmesan cheese before serving.

Notes

For a vegetarian version, substitute ground beef with plant-based protein or vegetables.
