Ingredients

Sweet Potatoes

  • 2 large Sweet Potatoes
  • 1 pound Ground Beef
  • 3 cloves Garlic, Minced
  • ½ red onion Red Onion, Diced
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Italian Seasoning
  • 2 teaspoons Chili Powder
  • 2 teaspoons Paprika
  • to taste salt and pepper Salt and Pepper
  • cup Mozzarella Cheese

Instructions 

  • Bake sweet potatoes at 400°F for 60-75 minutes until soft.
  • Sauté diced onion for 2-3 minutes, add garlic and ground beef, cook until browned. Mix in seasonings and tomato paste.
  • Split sweet potatoes, fluff inside, and fill with beef mixture.
  • Top with mozzarella cheese and broil until melted and bubbly.

Notes

For extra flavor, add fresh herbs or a squeeze of lime before serving.
