A flavorful and colorful skillet dish combining chicken sausage with fresh vegetables and a tangy BBQ sauce, perfect for a quick summer meal.

Ingredients

Protein

  • 24 ounces chicken sausage links, sliced
  • 2 cups zucchini, cubed
  • 1 cup red bell pepper, cubed
  • 1 cup green bell pepper, cubed
  • 1 small red onion, cubed
  • 1 tsp salt
  • 0.5 tsp pepper
  • 3 riblets corn riblets (or 1/2 cup canned corn)
  • 0.5 cup yellow mustard
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 0.5 tbsp tomato paste
  • 1 tsp worcestershire sauce
  • 0.5 tsp chicken bouillon
  • 0.5 tsp kosher salt, plus more to taste
  • 1 tsp smoked paprika
  • 1 small clove garlic, grated
  • 0.5 tsp onion powder
  • 0.125 tsp cayenne pepper, adjust to taste

Instructions 

  • Combine BBQ sauce ingredients in a small pot, simmer for 2-3 minutes, then set aside.
  • Cook sliced sausage in a skillet over medium-high heat for 6-8 minutes until browned, then remove.
  • Sauté vegetables in the same skillet for 7-10 minutes until tender-crisp.
  • Return sausage to skillet, toss with vegetables, top with black pepper, and drizzle with BBQ sauce before serving.

Notes

Adjust cayenne and salt to taste for desired spice and saltiness.
