A vibrant and flavorful pasta salad featuring sun-dried tomatoes, fresh vegetables, and a tangy balsamic dressing, perfect for a quick lunch or side dish.

Ingredients

Pasta and Vegetables

  • 16 oz short pasta (rigatoni, rotini, bow tie, etc.)
  • 3 oz baby spinach
  • 10 oz cherry tomatoes (halved)
  • 1 jar sun-dried tomatoes in oil with Italian herbs, drained
  • 0.5 small red onion (diced)
  • 0.5 cup shredded parmesan
  • 8 oz mozzarella pearls
  • 0.33 cup chopped basil
  • 0.33 cup extra virgin olive oil (or enough to make 2/3 cup with oil from tomatoes)
  • 0.33 cup oil drained from sun-dried tomatoes
  • 2 T balsamic vinegar
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 0.5 tsp pepper
  • 0.5 tsp salt (more or less to taste)

Instructions 

  • Cook pasta al dente, drain, and toss with spinach to wilt. Cool slightly.
  • Mix pasta with basil, onion, sun-dried tomatoes, cherry tomatoes, parmesan, and mozzarella.
  • Whisk dressing ingredients and toss with salad, reserving some for serving. Chill for 30 minutes, then toss again before serving.

Notes

For best flavor, let the salad chill before serving.
