  • 2 teaspoons olive oil
  • 1 pound 90% to 93% lean ground beef
  • ¾ cup diced sweet yellow onion
  • 1 tablespoon Homemade Taco Seasoning Mix (or a store-bought blend)
  • 2 tablespoons tomato paste
  • 2 tablespoons water
  • 11 ounces tortilla chips (use sturdy chips like Mission Triangles)
  • 1 ½ cups Nacho Cheese Sauce (warmed, or more as desired)
  • 15 ounce can black beans (rinsed and drained)
  • 2 to 3 cups shredded cheese (sharp cheddar and Monterey Jack)
  • 1 Roma tomato (diced)
  • ¼ cup sour cream
  • 2 tablespoons fresh cilantro leaves
  • 2 green onions thinly sliced

Sliced pickled jalapenos (nacho rings)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook beef and onion in oil until no pink; add seasoning, tomato paste, and water. Remove from heat.
  • Layer chips with half the cheese, beef, and beans; top with remaining chips, cheese, beans, and beef. Bake 15 minutes.
  • Garnish with diced tomato, sour cream, green onions, cilantro, and jalapenos.

Notes

Use sturdy chips to prevent sogginess and enjoy immediately for best texture.
