A delicious and hearty skillet dish combining homemade sweet potato gnocchi with sausage and greens in a flavorful coconut sauce.

Ingredients

Sweet Potatoes

  • 2 pounds sweet potatoes, peeled and cubed

Tapioca Flour

  • 0.25 cup tapioca flour

Sea Salt

  • 1 teaspoon sea salt

Oat Flour

  • 2.5 cups oat flour, divided

Olive Oil

  • 2 tablespoons olive oil, to fry
  • 1 tablespoon olive oil

Chicken Andouille Sausage

  • 1 pound nitrate-free chicken andouille sausage, sliced into bite-size pieces

Mushrooms

  • 1 cup quartered mushrooms

Yellow Onion

  • 0.5 yellow onion yellow onion, chopped

Garlic Cloves

  • 3 large garlic cloves, chopped

Tapioca Flour

  • 1 tablespoon tapioca flour

Fresh Rosemary

  • 1 tablespoon fresh rosemary, chopped

Fresh Thyme Leaves

  • 1 tablespoon fresh thyme leaves

Black Pepper

  • 0.25 teaspoon freshly ground black pepper

Coconut Milk

  • 1 cup full-fat coconut milk

Fresh Spinach

  • 2 cups fresh spinach

Instructions 

  • Boil sweet potatoes until tender, then mash and mix with tapioca, salt, and oat flour to form dough.
  • Shape dough into ropes, cut into 1-inch pieces, and boil until they float. Drain and set aside.
  • Fry gnocchi in oil until golden, then set aside. Cook sausage until browned and set aside.
  • Sauté mushrooms, onion, and garlic; add spices and coconut milk, simmer to thicken. Stir in spinach until wilted.
  • Combine gnocchi and sausage with sauce, toss to coat, and serve hot.

Notes

For extra flavor, press a fork into each gnocchi piece to create ridges.
