Instructions
Boil sweet potatoes until tender, then mash and mix with tapioca, salt, and oat flour to form dough.
Shape dough into ropes, cut into 1-inch pieces, and boil until they float. Drain and set aside.
Fry gnocchi in oil until golden, then set aside. Cook sausage until browned and set aside.
Sauté mushrooms, onion, and garlic; add spices and coconut milk, simmer to thicken. Stir in spinach until wilted.
Combine gnocchi and sausage with sauce, toss to coat, and serve hot.
Notes
For extra flavor, press a fork into each gnocchi piece to create ridges.
