A delicious and comforting sweet potato souffle with a crunchy pecan topping, perfect for holidays or special occasions.

Ingredients

  • 3 cups cooked sweet potatoes (cut into 1 1/2 inch pieces)
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs eggs
  • 1/2 teaspoon cinnamon
  • 12 tablespoons butter (divided use)
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped pecans
  • as needed quantity cooking spray

Instructions 

  • Preheat oven to 350°F and spray a 9" square pan with cooking spray.
  • Puree sweet potatoes, sugar, salt, vanilla, eggs, cinnamon, and 6 tbsp melted butter until smooth; spread into prepared dish.
  • Mix remaining 6 tbsp melted butter, brown sugar, flour, and pecans; sprinkle over sweet potatoes.
  • Bake for 30-40 minutes until hot and lightly browned; cover with foil if topping browns too quickly.
  • Let sit for 10 minutes before serving.
