Ingredients

Meat

  • 1 lb Mexican Chorizo
  • 1 tbsp olive oil

Eggs and Dairy

  • 8 large eggs
  • 1/2 cup cottage cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder

Tortillas and Cheese

  • 8 medium (6-inch) flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions 

  • Cook chorizo in a skillet until browned, then drain excess grease.
  • Whisk eggs, cottage cheese, salt, pepper, and garlic powder until smooth.
  • Cook eggs in the same skillet until slightly wet, then remove from heat.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • Assemble tacos with chorizo, eggs, and cheese, then bake until cheese bubbles and tortillas are golden.

Notes

For extra flavor, add chopped cilantro or hot sauce before serving.
