A comforting and hearty casserole featuring ground beef, creamy soup, and crispy tater tots.

Ingredients

Meat & Vegetables

  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon italian seasoning

Dairy

  • 1/2 cup sour cream
  • 1 can condensed cream of mushroom soup ((10.5 ounce))
  • 1 can corn (drained) ((12 ounce))
  • 2 cups shredded cheddar ((divided))
  • 32 ounces frozen tater tots ((see note))
  • salt & pepper ((to taste))
  • chopped scallions ((for serving, optional, to taste))

Instructions 

  • Preheat oven to 375F and move rack to top third.
  • Cook beef and onions in a skillet over medium-high heat until browned (7-8 minutes).
  • Add garlic, Worcestershire sauce, and Italian seasoning; cook for 1 minute.
  • Stir in sour cream, soup, corn, and 1/2 cup cheddar; heat through.
  • Transfer to a casserole dish, top with remaining cheese and tater tots.
  • Bake uncovered for 45 minutes until tater tots are browned and cheese is bubbly.

Notes

For extra flavor, consider adding some spices or herbs to the beef mixture.
