A hearty and flavorful stew combining beef, sausage, vegetables, and spices, perfect for a comforting meal.

Ingredients

Meat

  • 2 lb ground beef
  • 2 packages kielbasa sausage sliced into ½ inch pieces

Vegetables and Canned Goods

  • 2 cloves garlic, minced
  • 1 onion chopped onion
  • 2 14.5oz cans peeled and diced tomatoes, drained
  • 4 medium baking potatoes, peeled and diced
  • 2 15oz cans pinto beans with liquid
  • 1 15.2oz can whole kernel corn, drained
  • 2 14.5oz cans diced tomatoes with green chile pepper, with liquid
  • 1 10oz frozen mixed vegetables

Liquids and Spices

  • 4 cups water
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • to taste Salt and pepper

Instructions 

  • Sauteé onion in a Dutch oven over medium heat.
  • Add ground beef and cook until no pink remains, then add sliced sausage.
  • Pour in tomatoes, pinto beans, corn, potatoes, diced tomatoes with chiles, and vegetables. Mix well.
  • Add spices and water, bring to a boil, then simmer for 1 hour.

Notes

Adjust seasoning to taste and serve hot.
