shredded purple cabbage

shelled edamame

(can sub cashews)

fresh cilantro, lime and sesame seeds

shredded chicken or cubed tofu

creamy peanut butter

soy sauce
(or tamari for gluten-free)

lime juice

honey or maple syrup

Instructions
Cook rice noodles as per package, then set aside.
Whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, and ginger to make dressing. Add water to thin if needed.
Combine noodles, carrots, cabbage, edamame, peanuts, and scallions in a large bowl. Toss with half the dressing.
Taste and add more dressing if desired. Top with optional shredded chicken or tofu.
