A vibrant and flavorful vegan slaw with a creamy peanut dressing, perfect for a quick, healthy meal or side dish.
Ingredients
Dressing

natural creamy peanut butter
(just peanuts or peanuts + salt)

lite coconut milk

gluten-free tamari or coconut aminos
(or soy sauce if not gluten-free)

pure maple syrup

fresh lime juice
(or rice vinegar)
Salad

shredded green cabbage
(or coleslaw mix)

shredded purple/red cabbage

red bell pepper
julienned
(sliced thinly into matchsticks)

Instructions
Combine peanut butter, coconut milk, tamari, syrup, and lime juice in a jar or small bowl. Whisk or blend until smooth.
In a large bowl, toss green cabbage, purple cabbage, carrots, bell pepper, green onions, cilantro, and peanuts.
Add half of the dressing to the slaw and toss to coat. Let sit 10-15 minutes, then add more dressing if desired.
Serve topped with extra peanuts, cilantro, or sesame seeds, as desired.
Notes
For extra flavor, add a squeeze of lime or a sprinkle of sesame seeds before serving.
