A creative way to enjoy Thanksgiving leftovers, these egg rolls combine turkey, stuffing, and cranberry sauce in a crispy wrapper for a festive appetizer.

Ingredients

Filling

  • 2 cups cooked turkey, shredded or chopped
  • 1 cup prepared stuffing
  • 0.5 cup mashed potatoes
  • 0.25 cup cranberry sauce (whole berry or jellied)
  • 0.25 cup shredded cheddar or Swiss cheese (optional)

Egg Roll Wrappers

  • 12 pieces egg roll wrappers
  • 0.25 cup water (for sealing the wrappers)

Other

  • to taste Vegetable oil for frying
  • optional Gravy for dipping

Instructions 

  • Mix turkey, stuffing, mashed potatoes, cranberry sauce, and cheese (if using) until combined.
  • Place filling on wrapper, fold bottom corner over, fold sides, roll tightly, and seal with water.
  • Heat oil in a pan to 350°F (175°C).
  • Fry egg rolls until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
  • Serve hot with gravy for dipping.

Notes

You can customize the filling with your favorite leftovers or cheeses for added flavor.
