A rich and moist caramel cake layered with luscious caramel frosting and drizzled with caramel sauce, perfect for special occasions.

Ingredients

Cake Batter

  • 2 cups sugar
  • 2/3 cup butter (cut in small cubes)
  • 4 tbsp water
  • 1 cup whipping cream
  • 1 1/4 cups sifted all purpose flour
  • 1 1/4 cups sifted cake flour
  • 1/2 teaspoon baking soda
  • 2 tsp baking powder
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 tbsp vanilla extract (good quality)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/4 cups milk (or evaporated milk) (undiluted for extra richness)

Caramel Sauce

  • 1/2 cup caramel sauce
  • 3 1/2 cups icing sugar (powdered sugar)
  • 2 tsp vanilla extract
  • a few milk additional milk (for frosting adjustment)

Instructions 

  • Prepare caramel sauce: boil sugar and water until amber, then add butter and cream, stirring until smooth. Cool completely.
  • Preheat oven to 325°F (160°C). Grease pans and line with parchment. Mix dry ingredients; set aside.
  • Beat butter, sugar, and vanilla until fluffy. Add oil, eggs, then fold in dry ingredients alternately with milk. Divide batter into pans.
  • Bake for 30-35 minutes. Cool in pans 10 minutes, then remove to wire racks.
  • Prepare caramel frosting: beat butter, icing sugar, vanilla, and milk until smooth. Layer cakes, fill with caramel, frost, and drizzle remaining caramel on top.

Notes

Use a large saucepan to prevent overflow when boiling caramel. Be cautious with hot sugar to avoid burns.
