Ingredients

(Freshly grated for best texture)

Raisins

Mayonnaise
(Or Greek yogurt for a lighter option)

Instructions
If using, soak raisins in warm water for 5–10 minutes, then drain and dry.
Grate the carrots to yield about 2 cups.
Mix mayonnaise, honey, vinegar, salt, and pepper in a bowl until smooth.
Add carrots, raisins, and pineapple (if using) to the dressing. Mix well.
Chill in the fridge for at least 15 minutes before serving.

This salad is best served chilled and can be stored in the fridge for up to 2 days.
