A fresh and vibrant Greek salad combining crisp vegetables, tangy feta, and a simple lemon-olive oil dressing.
Ingredients
Vegetables

red onion
(finely sliced into half moons)
1/2
English cucumber
cucumber
(peeled and cut into half moon chunks)

mixed tomatoes
(cut into uneven chunks)

dried black olives

feta
(broken into chunks)
Seasoning
to taste
sea salt & black pepper

extra virgin olive oil

tbsp
freshly squeezed lemon juice
small handful
fresh oregano
(leaves picked)
Instructions
Slice the onion into half moons and soak in cold water for a few minutes, then drain and set aside.
Peel and cut the cucumber into half moon chunks. Scatter over a platter.
Cut the tomatoes into chunks and add to the platter along with olives. Drain onion slices and add to the salad.
Break feta into chunks, season with salt and pepper, then scatter over the salad.
Whisk olive oil and lemon juice, drizzle over the salad, sprinkle oregano, and serve at room temperature.
Notes
Use fresh ingredients for the best flavor and serve immediately.
