A flavorful and easy-to-make toasted orzo pasta dish with fresh herbs, sun-dried tomatoes, and Parmesan cheese.

Ingredients

Oil

  • 0.5 cup extra virgin olive oil
  • 1.5 cups orzo pasta
  • 7 cups boiling water

Salt

  • to taste Kosher salt

Garlic

  • 5 cloves garlic cloves, minced

Red pepper flakes

  • optional Red pepper flakes (optional)
  • 0.5 lemon lemon, juiced
  • 1 packed cup chopped parsley
  • 0.5 cup chopped dill
  • 1/3 cup sun dried tomatoes, chopped

Black pepper

  • to taste Black pepper
  • 0.5 to 0.75 cup grated parmesan (plus more to your liking)

Instructions 

  • Toast the orzo in olive oil until golden brown.
  • Add boiling water with salt; cook until al dente. Reserve 1 cup of pasta water.
  • Make the herb olive oil sauce with garlic, lemon juice, herbs, and reserved pasta water.
  • Add drained pasta, sun-dried tomatoes, and Parmesan; toss and adjust with pasta water as needed.
  • Finish with more Parmesan and red pepper flakes if desired.

Notes

For extra flavor, toast the orzo thoroughly and adjust seasoning to taste.
