A vibrant and satisfying French-inspired salad featuring tuna, potatoes, green beans, and fresh herbs, perfect for a light yet hearty meal.

Ingredients

Canned Tuna

  • 2 cans high-quality tuna packed in olive oil
  • 1 pound small Yukon Gold potatoes, quartered
  • 8 ounces fresh green beans, trimmed
  • 4 large eggs
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons capers, drained
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 small garlic clove, minced
  • 1/2 teaspoon honey
  • to taste Salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill

Instructions 

  • Boil potatoes in salted water for 12-15 minutes until tender, then transfer to an ice bath.
  • Cook green beans in boiling salted water for 3-4 minutes, then transfer to the ice bath.
  • Boil eggs for 7 minutes, then peel and halve them.
  • Arrange greens on a platter, add cooled potatoes, green beans, tuna, eggs, tomatoes, olives, red onion, and capers. Drizzle with vinaigrette and garnish with herbs.

Notes

Use high-quality tuna for best flavor. Adjust salt and pepper to taste.
