Ingredients
Canned Tuna
2canshigh-quality tuna packed in olive oil
1poundsmall Yukon Gold potatoes, quartered
8ouncesfresh green beans, trimmed
4largeeggs
2cupsmixed salad greens
1cupcherry tomatoes, halved
1/2cupKalamata olives, pitted
1/4cupthinly sliced red onion
2tablespoonscapers, drained
1/4cupextra virgin olive oil
3tablespoonsfresh lemon juice
1tablespoonDijon mustard
1smallgarlic clove, minced
1/2teaspoonhoney
to tasteSalt and freshly ground black pepper
2tablespoonschopped fresh parsley
1tablespoonchopped fresh dill
Instructions
Boil potatoes in salted water for 12-15 minutes until tender, then transfer to an ice bath.
Cook green beans in boiling salted water for 3-4 minutes, then transfer to the ice bath.
Boil eggs for 7 minutes, then peel and halve them.
Arrange greens on a platter, add cooled potatoes, green beans, tuna, eggs, tomatoes, olives, red onion, and capers. Drizzle with vinaigrette and garnish with herbs.
