A flavorful and easy-to-make casserole combining ground turkey, enchilada sauce, and cheese, perfect for a satisfying meal.

Ingredients

Main ingredients

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 20 ounces red enchilada sauce ((two 10 oz cans))
  • 12 ounces frozen corn
  • 14 ounces black beans (drained and rinsed)
  • 10 ounces diced tomatoes with green chiles
  • 12 corn tortillas corn tortillas
  • 3 cups shredded cheddar cheese (or Mexican cheese)

Instructions 

  • Preheat oven to 350°F (175°C). Spread half of enchilada sauce in a 9x13" dish.
  • Cook turkey with olive oil until browned. Add spices, remaining sauce, corn, beans, and tomatoes; stir.
  • Layer half of tortillas, half of turkey mixture, and half of cheese. Repeat layers and top with remaining cheese.
  • Bake for 30-35 minutes, or 25 minutes if using an 8x8" dish.

Notes

For a spicier version, add more chiles or hot sauce.
