A flavorful and easy-to-make casserole combining ground turkey, enchilada sauce, and cheese, perfect for a satisfying meal.

Instructions
Preheat oven to 350°F (175°C). Spread half of enchilada sauce in a 9x13" dish.
Cook turkey with olive oil until browned. Add spices, remaining sauce, corn, beans, and tomatoes; stir.
Layer half of tortillas, half of turkey mixture, and half of cheese. Repeat layers and top with remaining cheese.
Bake for 30-35 minutes, or 25 minutes if using an 8x8" dish.
Notes
For a spicier version, add more chiles or hot sauce.
