A hearty and flavorful soup perfect for using leftover turkey, topped with fresh ingredients for a satisfying meal.

Ingredients

Butter

  • 3 tablespoons butter

Onion

  • 1 large onion (diced)

Garlic

  • 2 tablespoons garlic (minced)

Cooked turkey

  • 3 cups cooked turkey (diced into 1/2" pieces)

Chili powder

  • 2 teaspoons chili powder

Salt

  • 1 teaspoon salt

Black pepper

  • 1/2 teaspoon black pepper

Corn

  • 2 cups corn

Black beans

  • 2 15-ounce cans black beans (rinsed and drained)

Crushed tomatoes

  • 1 10-ounce can crushed tomatoes

Chicken broth

  • 4 cups chicken broth

Red enchilada sauce

  • 1 14-ounce can red enchilada sauce

Tortilla chips

  • tortilla chips

Cheddar cheese

  • cheddar cheese (shredded)

Sour cream

  • sour cream

Avocado

  • avocado (diced)

Cilantro

  • cilantro

Instructions 

  • Melt butter in a large pot, cook onions until light caramel, then add garlic and cook 2 minutes.
  • Add turkey, spices, corn, beans, tomatoes, broth, and enchilada sauce; bring to boil and simmer 20 minutes.
  • Serve with tortilla chips, cheese, sour cream, avocado, and cilantro.

Notes

For extra flavor, garnish with additional toppings of your choice.
