2poundsbeef chuck steak (or chuck roast or beef stew meat cut into ½-inch pieces (cubes))
1tablespoonolive oil
1/2teaspoonsalt
1/2teaspoonblack pepper(freshly ground)
1mediumonion (chopped)
5clovesgarlic (minced)
1teaspoonItalian seasoning
1/4cuptomato paste
5cupsbeef broth
1poundsmall potatoes (cut into ½-inch pieces)
2mediumcarrots (sliced)
1largered bell pepper (chopped)
1cupgreen peas

Instructions
Heat a large pot over medium-high heat. Add olive oil and brown beef in batches, 2 minutes per side.
Reduce heat to medium. Add chopped onion, minced garlic, and Italian seasoning; cook for 1 minute.
Stir in tomato paste and cook for 2 minutes. Add broth and bring to a boil, then simmer covered for 30 minutes until beef is tender.
Add potatoes, carrots, and bell pepper; simmer for 20 minutes. Stir in green peas and cook for 10 minutes.
Season with salt and pepper. Garnish with herbs if desired before serving.
Notes
For a richer flavor, let the soup simmer longer or add a splash of red wine during cooking.
