A hearty and comforting vegetarian pot pie with a flaky biscuit topping, perfect for cozy dinners.

Ingredients

Vegetables

  • 2 tablespoons olive oil
  • 1 yellow onion diced yellow onion
  • 1.5 cups sliced celery
  • 1.5 cups sliced carrot
  • 6 cloves garlic, thinly sliced
  • 2 teaspoons dried thyme
  • 1 teaspoon dried sage
  • 6 tablespoons butter
  • 1/2 cup all purpose flour
  • 2.5 cups vegetable broth
  • 1/2 cup heavy cream
  • 12 oz frozen peas
  • 15 oz canned garbanzo beans (chickpeas), drained
  • 16 oz canned biscuit dough
  • 1 egg beaten

Seasonings

  • Kosher salt
  • fresh cracked pepper

Garnish

  • fresh chopped parsley for garnish

Instructions 

  • Heat oil in a large skillet over medium-high heat.
  • Cook onion, celery, and carrot with salt and pepper for 8 minutes.
  • Add garlic, thyme, sage, and butter; cook for 1 minute.
  • Stir in flour and cook for 1 minute, then add heavy cream and broth, simmer until thickened.
  • Add peas and chickpeas, cook briefly, then top with biscuit dough, brush with egg, and bake at 375°F for 30 minutes.

Notes

Use fresh herbs if available for extra flavor.
