A fresh and crunchy salad combining crisp vegetables, sweet fruits, and toasted nuts, dressed in a tangy yogurt vinaigrette.

Instructions
Preheat oven to 275°F (135°C).
Toss walnuts and pumpkin seeds with maple syrup, olive oil, salt, and pepper. Bake on parchment for 35 minutes, then cool and break into pieces.
Whisk together olive oil, yogurt, vinegar, thyme, mustard, maple syrup, salt, and pepper for dressing.
Slice celery, halve grapes, cube apples, and combine with dressing. Top with brittle pieces before serving.
Notes
Toast the brittle for extra crunch and flavor.
