A flavorful and festive stuffing featuring wild rice, herbs, cranberries, and pecans, perfect for holiday gatherings.

Ingredients

  • 210 g USA Wild Rice
  • 480 ml chicken or vegetable stock
  • 15 g unsalted butter
  • 15 ml garlic-infused olive oil
  • 1 medium apple, peeled, cored, and diced
  • 4 stalks celery, diced ((120–150 g))
  • 4 spring onions chopped
  • to taste Salt and freshly ground pepper
  • 1 tbsp fresh sage, finely chopped (plus more for garnish)
  • 2 tsp fresh rosemary, finely chopped ((about 2 g))
  • a pinch nutmeg
  • 75 g dried cranberries
  • 60 g chopped pecans

Instructions 

  • Simmer wild rice in broth until tender, about 30 minutes.
  • Cook apples, celery, and scallions in olive oil and butter for 2-3 minutes.
  • Stir in herbs, nutmeg, salt, and pepper; cook until fragrant.
  • Combine cooked rice with apple and herb mixture, then stir in cranberries and pecans.
  • Adjust seasoning; serve warm garnished with extra sage.

Notes

For added flavor, toast the pecans lightly before adding.
