Delicious crispy fritters made with fresh zucchini and sweet corn, perfect for a quick snack or light meal.

Instructions
Preheat oven to 220°C. Grate zucchini, squeeze out excess liquid, and set aside.
Mix corn, onion, herbs, eggs, parmesan, salt, and pepper in a bowl. Add grated zucchini, then flour and baking powder, and combine.
Form mixture into balls, flatten slightly, place on baking tray, and brush with olive oil.
Bake for 20 minutes until golden. Rest briefly, then serve with Greek yogurt sauce.
Notes
Ensure excess liquid is squeezed out from zucchini for best texture.
