Delicious crispy fritters made with fresh zucchini and sweet corn, perfect for a quick snack or light meal.

Ingredients

Vegetables

  • 3 medium zucchini (grated and excess liquid squeezed out)
  • 1 cup corn kernels (fresh, canned, or frozen and thawed)
  • ½ red onion red onion (diced into small cubes)
  • 2 eggs eggs
  • ½ cup flour (chickpea flour used)
  • 1 tsp baking powder
  • ¼ cup parmesan cheese
  • Handful chopped coriander/cilantro or parsley
  • to taste salt and pepper
  • Olive oil olive oil (for brushing/oiling)
  • Serve with Greek yogurt sauce Greek yogurt sauce (optional)

Instructions 

  • Preheat oven to 220°C. Grate zucchini, squeeze out excess liquid, and set aside.
  • Mix corn, onion, herbs, eggs, parmesan, salt, and pepper in a bowl. Add grated zucchini, then flour and baking powder, and combine.
  • Form mixture into balls, flatten slightly, place on baking tray, and brush with olive oil.
  • Bake for 20 minutes until golden. Rest briefly, then serve with Greek yogurt sauce.

Notes

Ensure excess liquid is squeezed out from zucchini for best texture.
