Back in our little Louisiana kitchen, she’d always have something warm and fragrant baking in the oven. While this recipe has a modern twist with its protein boost, it carries the same comforting essence of those sweet, nostalgic days. There’s something magical about how a loaf of bread can bring people together, inviting them to pause, share, and savor life’s simple joys.

Why You’ll Absolutely Love This Recipe

  • It’s so easy, it feels like a little kitchen victory!
  • Perfect for a protein breakfast bread that keeps you nourished and energized.
  • Brings in the cozy flavors of fall with every bite, thanks to the pumpkin and spices.
  • Healthy and gluten-free, it’s a treat you can feel good about sharing.

Simple Ingredients for a Delicious Treat

Every ingredient in this recipe has a special place in my heart. Oat flour keeps it gluten-free yet hearty, while pumpkin puree adds moisture and a rich, earthy flavor. Greek yogurt gives it a creamy, tangy note, and those dark chocolate chips? Well, they’re just like a surprise hug in the middle of your day. Here’s what you’ll need:

  • 1 ¼ cup oat flour (do not pack, scoop into measuring cup and level)
  • 1 cup pumpkin puree
  • ¾ cup greek yogurt
  • 2 large eggs
  • ½ cup packed vanilla flavored protein powder
  • ½ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup dark chocolate chips

You’ll find the full ingredient list with exact measurements in the recipe card below!

Let’s Make Some Magic: Step-by-Step

Let’s roll up our sleeves and get started. Don’t worry, I’ll be here every step of the way:

  1. Preheat your oven to 350 degrees Fahrenheit. Prepare a standard loaf pan with parchment paper and a light spray of cooking spray. Set it aside, knowing something wonderful is about to happen.
  2. In a large mixing bowl, combine the oat flour, pumpkin puree, greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda. Stir with a hand mixer or a trusty wooden spoon until everything is beautifully blended. Fold in most of the chocolate chips, saving a few to sprinkle on top for a little extra love.
  3. Pour the mixture into your prepared loaf pan, smoothing the top with a spatula. Sprinkle those reserved chocolate chips on top, like you’re adding a touch of magic.
  4. Bake for 35-45 minutes. You’ll know it’s ready when a toothpick inserted into the center comes out clean, and your kitchen is filled with the warm, inviting aroma of pumpkin and spice.
  5. Enjoy! Each slice is a little piece of joy, ready to be shared.

A Few of My Favorite Tips

Here are a few secrets to make your pumpkin bread shine:

  • For a nuttier flavor, try toasting your oat flour lightly before mixing.
  • If you want to add a bit of crunch, throw in a handful of chopped pecans or walnuts.
  • Let the bread cool completely before slicing to keep it from crumbling. Patience is key!

How I Like to Serve This

I love serving this bread slightly warm, with a slather of butter or a dollop of cream cheese. Pair it with a cup of coffee or tea, and you’ve got a delightful pumpkin protein breakfast or afternoon snack. It’s also a wonderful companion to a cozy gathering, where each slice becomes a conversation starter.

Storing & Reheating (If There’s Any Left!)

Store your protein pumpkin bread in an airtight container at room temperature for up to three days. For longer storage, wrap it tightly and freeze. When you’re ready to enjoy a slice, just warm it in the oven or toaster for that fresh-from-the-oven taste.

The sweet, spicy aroma of pumpkin bread wafting through the house is like a warm hug from my grandmother. Growing up in a small Louisiana town, my grandma’s kitchen was the heart of our home, and her Pumpkin Bread with Streusel was the heartbeat. Every slice carries cherished memories of love, laughter, and the simple joys of life. This recipe is more than just a tasty bread; it’s a bridge to the past and a celebration of tradition and family.

Why You’ll Absolutely Love This Recipe

  • It’s so easy, it feels like a little kitchen victory!
  • The aroma alone is enough to make your home feel like a cozy haven.
  • This Pumpkin Streusel Bread is a perfect blend of sweet and spice, ideal for any fall gathering.
  • The streusel topping adds a delightful crunch that makes each bite a joy.

Simple Ingredients for a Delicious Treat

Every ingredient in this recipe is like an old friend, bringing warmth and comfort. The pumpkin puree adds moisture and a rich, earthy sweetness, while the spices like cinnamon, nutmeg, and cloves remind me of autumn walks through crunchy leaves. The streusel topping is a nod to those crumbly, sweet delights my grandma used to make. And that honey glaze? A drizzle of Southern sunshine.

You’ll find the full ingredient list with exact measurements in the recipe card below!

Let’s Make Some Magic: Step-by-Step

Preheat your oven to 350°F (175°C), and let’s get started. First, grease a 9×5-inch loaf pan and line it with parchment paper. This little step ensures our bread comes out perfectly every time. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set it aside—it will be our dry mix.

In a separate bowl, combine the pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, and vanilla extract. Whisk until smooth, letting the ingredients meld into a beautiful, golden batter.

Now, gently stir the dry ingredients into the wet mixture, being careful not to overmix. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.

A Few of My Favorite Tips

Here’s a little secret: let the batter rest for about 10 minutes before baking. This allows the flavors to mingle and the pumpkin to shine. For the streusel topping, mix brown sugar, melted butter, flour, and cinnamon until crumbly, then sprinkle it generously over the batter. Bake for 50–60 minutes, or until a toothpick comes out clean. Trust me, the wait is worth every second!

How I Like to Serve This

There’s nothing like a slice of warm pumpkin bread with a pat of butter melting into it. Pair it with a cup of coffee or a glass of milk, and you’ve got yourself a moment of pure bliss. I also love serving it with a dollop of whipped cream for a little indulgence.

Storing & Reheating (If There’s Any Left!)

Wrap any leftover slices in plastic wrap or store them in an airtight container. They stay fresh on the counter for up to three days. For longer storage, freeze the slices individually. When you’re ready to enjoy, a quick zap in the microwave or a few minutes in the oven will bring back that freshly baked goodness.

Simple Ingredients for a Delicious Treat

Every ingredient in this Pumpkin Bread Recipe has a story to tell. The canned pumpkin puree is the star, bringing that rich, earthy flavor that’s synonymous with fall. I opt for unsweetened applesauce to keep it light and moist without extra fat. Cinnamon, nutmeg, and cloves are like old friends, adding warmth and depth, while a hint of vanilla extract whispers sweetness. And let’s not forget the brown sugar—its molasses touch is the secret to that deep, cozy flavor. You’ll find the full ingredient list with exact measurements in the recipe card below!

Let’s Make Some Magic: Step-by-Step

Step into the kitchen with me, and let’s bring this bread to life. First, preheat your oven to 350°F (175°C) and prepare a loaf pan. In one bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. In another, blend the wet ingredients—pumpkin puree, sugars, applesauce, eggs, vanilla, and milk. Gently fold the dry mix into the wet, stirring just until combined. Pour the batter into your prepared pan, smoothing the top with a spatula. Bake for about 50-60 minutes, until a toothpick comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack. And there you have it—a loaf of love, ready to be shared.

A Few of My Favorite Tips

Here’s a little secret—when measuring your flour, always sift it for a lighter texture. And if you’re feeling adventurous, toss in a handful of chopped nuts or dried cranberries for an extra layer of flavor. Remember, don’t over-mix the batter; we want a tender crumb, not a tough one!

How I Like to Serve This

Let’s get our hands floury and hearts full. Start by preheating your oven to 350ºF and greasing your loaf pans with butter or non-stick spray. I find that using a whisk to blend the sugar and oil brings a sense of connection to the process, just like my grandmother taught me. Add the eggs one at a time, mixing lovingly after each addition. Fold in the pumpkin purée and water, letting the mixture come together like a beautiful, autumnal symphony.

Now, gently fold in the dry ingredients—flour, baking soda, salt, and those warming spices. Remember, we’re not aiming for perfection, just a batter that’s well-combined and ready to pour into the prepared pans. Bake for about an hour, but start checking for doneness after 45 minutes. The loaves are ready when their centers spring back to the touch.

A Few of My Favorite Tips

Here’s a little secret: let your pumpkin bread cool in the pan for 15-20 minutes before transferring to a rack. It helps the flavors settle beautifully. If you’re feeling adventurous, add a handful of chocolate chips or nuts to the batter for an extra treat. And remember, don’t overmix—the less you fuss, the more tender your bread will be.

How I Like to Serve This

There’s nothing quite like a slice of this Delicious Pumpkin bread with a pat of butter, melting into the warm crumb. I often enjoy it with a cup of coffee on a crisp morning, or as a sweet ending to a family dinner. It’s also perfect for sharing—wrap a loaf in a tea towel and bring it to a neighbor. We’re using canned pumpkin puree, which is not to be confused with pumpkin pie filling. The puree lets the natural pumpkin flavor shine through. A mix of cinnamon, nutmeg, cloves, and ginger adds warmth and depth, making every bite feel like a celebration of the season.

Let’s Make Some Magic: Step-by-Step

Imagine us standing side by side in the kitchen, aprons on and ready to create something wonderful. Here’s how we’ll do it:

First, preheat your oven to 350°F (175°C) and prepare your loaf pan. Greasing it or lining it with parchment paper will ensure our bread comes out easily.

In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. These spices are the heart of our pumpkin bread, bringing warmth and a touch of nostalgia.

In a separate large bowl, mix the wet ingredients: pumpkin puree, eggs, oil, granulated sugar, brown sugar, milk, and vanilla extract. Whisk until smooth and well combined, like a melody of flavors coming together.

Now, let’s combine the dry and wet ingredients. Pour the dry mixture into the wet and stir just until everything is incorporated. Be gentle—overmixing is not our friend here. If you’re feeling adventurous, fold in some chopped walnuts or chocolate chips.

Pour the batter into your prepared loaf pan and pop it into the oven. Let it bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean. The aroma will fill your home, inviting everyone to gather around.

Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Patience is key, but it’s worth the wait!

A Few of My Favorite Tips

Here are some little secrets to make your pumpkin bread even better:

  • For extra moisture, consider using melted butter instead of vegetable oil. It adds a rich flavor that complements the pumpkin perfectly.
  • If you like a bit of crunch, sprinkle some raw sugar on top of the batter before baking. It creates a lovely sweet crust.
  • Want to make it even more special? Serve it with a dollop of whipped cream or a drizzle of maple syrup.

How I Like to Serve This

In my home, we love to serve this pumpkin bread warm, with a side of coffee or tea. It’s also delightful with a smear of butter or cream cheese. On cooler evenings, I enjoy it with a glass of milk, sitting on the porch, savoring the quiet moments of the day.

Storing & Reheating (If There’s Any Left!)

If you have any leftovers, store them in an airtight container at room temperature for up to three days. For longer storage, wrap the bread tightly in plastic wrap and keep it in the refrigerator for up to a week. To reheat, pop a slice in the microwave for a few seconds or warm it in the oven. It’ll taste just as fresh as when you first made it.
