  • 1 large egg
  • 1/2 cup granulated sugar

  • 1/4 cup canned pumpkin (any size, leftovers)
  • 1/4 cup canola oil (or neutral oil)
  • 1 teaspoon vanilla extract

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 to 3 tablespoons cinnamon sugar (for swirl)

Instructions 

  • Preheat oven to 350°F (175°C). Line 5 wells of a 12-cavity pan with parchment strips.
  • Mix egg, sugars, pumpkin, oil, and vanilla until smooth.
  • Whisk in sifted flour, baking powder, baking soda, spices, and salt until combined.
  • Fill wells halfway with batter, add cinnamon sugar on top, and swirl gently.
  • Bake for 20-23 minutes, cool for 10 minutes, then remove and cool completely.

Notes

Store in a covered container at room temperature for up to a week.
